I created this tasty little dish after buying a large quantity of bacon on special at the supermarket… Since then it has become my weekend brunch. Since I started calorie counting I have a new found appreciation for beans. Admittedly … Continue reading

Gluten Free Red Curry Recipe

Gluten Free Red Curry

Gluten Free Red Curry

I never Realised how many calories were in a Thai Red Curry due to the coconut milk I made one last night and after adding up the calories for this dish I REALLY wish I had measured out my serving sizes rather then tossing things into a bowl and a couple of containers.

My 1/3 sized dish came to around 700 calories due to the excessive amount of rice and generous portion size.

If I followed the instructions on the back of the back of spice paste, I would have seen that it made enough for 4 servings this would have taken it down to around 525 calories. But as I was starving I made myself up a HUGE pile (and put the left overs into two containers for lunch and dinner tomorrow).

I realised was eating it I realised it was WAY to much food, and wish I had split the dish into 4 meals, after all that would mean less cooking!!!!

So when you make this dish I recommend you make sure you follow the correct serving size on the pack and serve it with 1/2 a cup of rice, as this is more then enough. Be portion concious this winter!

Gluten Free and My Fitness Pal

As you know I am trying to drop a few kg’s to stay healthier and fit my clothes better. I have found a website with a few awesome tools for calorie counting and menu planning called myfitnesspal.com someone seems to have preloaded heaps of gluten free options into the calorie counter… who ever you are I love you!!!

I find this makes calorie counting so much easier and I can preload meals I eat all the time in to easily add up my daily allowance.

According to this website for my weight, height and age to lose another 5 kgs (I have already lost 5) I need to eat around 1400 calories a day.

I have been doing this and find it really interesting to see just how many calories are in the meals I normally eat (usually heaps) and I am finding new ways to cut calories out of popular meals.

From what I have learnt over the last few months I can stay the same weight if I continue to eat what I am eating, but if I exercise more then I currently do I can lose it weight a lot faster.

Somehow I think my weight loss goal to reach 69 kgs (I started at 79.9) might be foiled by my European holiday (especially after my friend has found gf chocolate croissants in Belgium somewhere). But I will keep you posted on how it goes.

Created by MyFitnessPal – Free Calorie Counter

I seem to be sitting around 74.1kgs and have been for the last 3 weeks so I think I need to get walking and start doing Pilate’s again to ditch the final 5kgs.

Feel free to leave me your weight loss or travel tips so I know someone is reading me blog :)

Gluten Free Calorie Counting Tools

After a month of being disorganised and stress eating I have decided I need to get back on track with my health and start eating for energy, after all food is fuel.

My calorie counting has gone out the window of late with travelling, staying with friends and eating at places where meals have an unknown (and probably high)number of calories.

I signed up for a free account at myfitnesspal today which looks to be a lot easier to use then sharecare.com and I was happy to see that there were heaps of New Zealand food brands already pre loaded into their database, which means no more hand typing in small figures off the back of packets and cans!!!

This morning I sat down to a real treat for breakfast (which is surprizing considering there is very little food in my cuboards).

Gluten Free Beans on Toast

  • 1 Slice of Pavillion Gluten Free Original Bread
  • 1 Serve (half a can) of Delmaine Butter Beans in Italian Sauce.

Beans on toast was a great treat for a chilly autumn morning and reminded me of the good old gluten eating days. I followed this up with a english breakfast tea for a snuggly start to my morning.

Great brekky idea for kids and adults :)

I think it was around 275 calories of my 1400 a day limit :)

Calorific Gluten Free Monday

When disaster strikes your eating habits change. You start to rely on more tinned foods, dishes that involve using less water to cook and clean, and quick easy meals.

I have tried not to eat to much food while I was stuck at home the last week and now that I am trying to get back to business as usual I have been eating up a storm.

As my friend emma often exclaims “I CAN’T STOP PUTTING THINGS IN MY MOUTH!”

Today I decided to start back on my sharecare diet – wiping the slate clean and plugging in some new weight loss goals.

I want to get down from 75.5 KGS to 72kgs by the start of may. Basically to achieve this I need to eat around 1500 calories a day and try exercise more then I have over the last week.

I was off to a good start with:

1x Black Coffee

1 x tin of Pams Mexican Tuna Salad with Corn and Beans 185g tin (about 355 calories drained)

Then for Lunch I decided to have half a gf pizza I had prepared yesterday:

Made with 1 Veredi Thin n Crispy Pizza Base With Chorizo, Capsicum Diced, Red Onion Diced, Mushrooms Sliced, 1/2 Zucchini sliced longways with a vegetable peeler, Feta, Sundried Tomato and Olive Pesto.

My first mistake

  • NOTHING GREEN – was not preparing anything green to go on the side of my pizza, I normally find if  I have a salad or green veges prepared it means I eat less pizza or pasta.
  • DEHYDRATION – When ever I do not drink enough water in the day I tend to eat more then I need to at meals times.
  • SERVING SIZE - I intend on only eating half the pizza for lunch around 650 calories. Which is actually 4 servings as there are 8 servings in a pizza.
  • Instead I ended up eating the whole thing. Bad I know as I really wasn’t that hungry and now I am sitting at my computer feeling sluggish and over full and thinking I will have to go to bed without my supper.

Changing my ways.

Now that I am consciously watching my calories and weight I can see where I have gone wrong in the pasta. Even in my gluten eating days I was in love with Breads and Spreads, Pastas and Pizza (I must have been Italian in another life). I am starting to see that gluten eating or gluten free these items are very high in starch and portion sizes are important if I want to maintain a healthy weight.

Gluten Free Calorie Counting Success

It has been 4 weeks now since I started keeping and eye on my calorie intake and I am pleased to say I have lost 3.9kgs :) NOT BAD!

Having never counted calories in my life… and YES I confess I had no clue how many calories were in anything It has been a real learning curve and it apparently paying off.

I had dinner with my parents the other night and found it interesting talking about the calorie  in our dinner.

My father has similar allergies to me and was the one who had put me onto the Dr OZ + Sharecare 11 Week Challenge website after he started an account – but had not yet started his “11 Week challenge”. He was extremely surprised to find out how many calories were in red meat and things like sausages and rice crackers. Being the only male in the family – it was common for dad to take a bigger serving of meat,  go back for seconds, or grab a row of rice crackers to snack on before or after meals.

Now I was in no way being a food Nazi, in fact far from it as I am not watching my calories like a hawk saying I must stay under 1400 Calories day I am using this calorie counting exercise as a way to learn how much energy is in the foods I eat,  how much fuel I need for my body on a day to day basis, so that I can make better food choices.

After sharing my weightloss success with my family I can see they are all motivated to start to.

Fatty Fatty Fries

After losing 3kgs on my new weight loss calorie counting scheme. I was feeling pretty good about myself on Sunday morning as I hopped on the scales seeing an unfamiliar number staring back at me.

These feelings of happiness soon turned to regret after a whopping 3000 calorie day thanks to my two good friends Gluten Free Belgium Slice and Fries from my gluten free fish n chip shop.

When I think back to many other times eating junk and watching DVD’s with the girls I realise how I got to my current weight. It is amazing how your perspective changes after you start counting your calories/energy in and energy out.

So in an effort to offset my extra calories I have done pilates today and will be going for a walk after dinner I think!

Damn you Fatty Fatty Fries!

Calorie Counting At A Barbeque Is Like Cheese Cake At Fat Camp

My sister was nice enough to invite me around to her house for a barbeque and a few pear ciders in her back yard yesterday. After a day running around performing bridesmaid duties for a good friend I decided that was exactly what I needed.

I decided that calorie counting at a barbeque is like offering a fat kid cheesecake at fat camp then telling him not to eat it.

I am not usually a huge fan of red meat , I find a small steak ever 2 weeks is enough to keep me going… but put that steak on a BBQ with a few of his steak friends and it is hard for me to say no.

Currently I am trying to lose 10kg in 14 weeks – I am 2kgs down 1 week in!

Because I am already seeing results I am far more motivated to stick to my calorie intake.

Luckily after making a few healthy snack choices yesterday my calories were not to high, I knew approximatley how much I could afford to eat at dinner time.

According to my research someone my weight, height and age burns approximatley 2200 calories a day – so it maintain my weight I can eat that – or to lose 10kg in 14 weeks I need to eat around 1420.

Originally I was trying to eat only 1200 calories to reach my goal in 11 weeks, but ended up bingeing because I was depriving myself so decided to alter my goal to fit with my life style.

I am so happy I survived my first calorie counting BBQ… wish me luck :)
